Coconut Bread Pudding

Every evening lately we've been lighting this candle.


 And the smell of it makes you hungry for dessert.  No faster way to gain weight but to have a candle that makes you want to eat.


 The other night we didn't make a Brulee, but we did make a bread pudding.


Recipe:     Pam spray a nice sized casserole pan.  Cut a loaf of French bread into 1" squares and put it in there.
Mix together  -   8 eggs
                          4 cups milk
                          1 tsp. vanilla
                          1 c. sugar
Pour this mixture over the bread and then sprinkle about 1 c. coconut over it.  Coconut makes it really good.
Set the pan in another pan that is filled with water to make a bath.
Bake at 315 degrees for 1 hour and 10 minutes or until set.


And then we make a vanilla sauce to pour over the top when it's done baking.

Vanilla Sauce
1/2 c. sugar
1/2c. brown sugar
1/2 c. whipping cream
1/2 c. butter
1 tsp vanilla

Combine all except the vanilla in a saucepan.  Cook over medium heat, stirring occasionally, until mixture thickens and comes to a full boil, 5-8 min.  Stir in the vanilla.  Serve over the warm pudding.

  2. Oh this sounds totally yummy! I can feel my already wide waist line expanding even further just looking at this.... oh and I'm dribbling .. Thank you for sharing this recipe, I will have to give it ago... for the next special day..

  5. I have that same exact candle. Good taste in smells, I must say. ;)

    And excellent taste on the bread pudding - one of my favorites! I'd make it more if my children liked it, but since they haven't learned to appreciate it yet, I know who would end up eating most of it. :P
